Mendocino Farms publishes one of the most granular nutrition guides in fast casual, down to per-scoop chicken add-ons on specific salads, and that granularity exposes a real split in the menu. Named "superfood" salads can run as low as 2.5 g of protein per 100 calories as ordered by default, while an unglamorous build made from the same published rows can clear 11 g per 100 calories, better than the best published bowl in Fuel's CAVA, Sweetgreen, or Panera guides.1 The goal here is to rank real orders by what a macro tracker actually needs, using only numbers that trace back to Mendocino Farms' own February 2026 nutrition PDF, and to flag the two places where that PDF is either internally inconsistent or silent.

01How to read a Mendocino Farms order
A Mendocino Farms order is built from independently weighed rows, which is unusual for fast casual. Sandwiches and salads are listed as a single whole-item serving in weight-ounces. Every named salad carries two rows, a "with dressing" default and a separate "without dressing" row with its own weight, so the dressing subtraction is already done for you rather than something you estimate. Protein add-ons — chicken, chicken adobado, Impossible Chorizo, Beyond Chorizo, and Baked Marinated Tofu — are listed as their own rows with independent weight and macros wherever they exist for a given item, which is what makes a defensible custom build possible in the first place.1
The catch is that those add-on rows are attached to specific items, not published as a universal per-ounce protein table. A chicken add-on documented under one salad cannot be assumed to carry the same value under a different salad unless that salad has its own published chicken row. Five items carry explicit add-on rows: Avocado & Quinoa Superfood Ensalada, Baja Green Goddess Salad and its wrap, The Modern Caesar and its wrap, Chen's Crispy Rice Wrap, and Thai Mango Wrap. Golden State Cobb, Not So Fried Chicken – Salad Style, and the named Chen's Crispy Rice Salad have no published add-on row at all, which means any custom protein added to those specific items cannot be given an official number.1
Six of eleven full sandwiches have an official "½ sandwich combo" row in the retail section of the guide. Every row above traces to a single official PDF entry or a same-item sum of official rows. The double-chicken Modern Caesar leads by a wide margin, and it is also the row that carries the most operational caution, which is the subject of the next section.1
03Protein maximum
The single densest protein build on the current Mendocino Farms menu is The Modern Caesar, dressing removed, with two "add chicken" scoops. The math is pure addition of official rows: the no-dressing salad base is 260 kcal and 13 g protein, and two chicken add-ons are 110 kcal and 20 g protein each. Summed, that is 480 kcal, 53 g protein, 25 g carbohydrate, 14 g fat, 11 g fiber, and 1,390 mg sodium, or 11.04 g of protein per 100 kcal and 9.06 kcal per gram of protein.1 That ratio is materially better than the best published bowls in Fuel's existing fast-casual guides: CAVA's Greek Salad Bowl and Steak + Harissa Bowl top out near 6.9, Sweetgreen's Kale Caesar with chicken lands near 7.1, and Panera's Green Goddess Cobb whole reaches 6.9.
Every number in that build is a direct official row, no estimation required. What is not confirmed is whether ordering two chicken scoops on one item is something the counter or app will actually do. Mendocino Farms' PDF documents one discrete, independently weighed chicken add-on, but no directly fetched first-party page states that a second scoop of the same add-on is available on every eligible item. The honest framing is that the 53 g protein Modern Caesar build is officially calculable from published rows and operationally plausible, but not operationally confirmed at the point of sale. Ask at the counter or check the app before you plan a repeat order around it.
If a single chicken add-on is the safer bet, the same base without dressing plus one scoop lands at 370 kcal, 33 g protein, 890 mg sodium, and 8.92 g of protein per 100 kcal, fully official with no ordering ambiguity.1 That single-scoop version clears a full per-meal protein dose under 400 kcal on its own.
04Fat loss and protein density
For a fat-loss day, the single-chicken Modern Caesar build above is the strongest calorie-to-protein trade on the menu that carries zero ordering uncertainty: 370 kcal, 33 g protein, 890 mg sodium.1 That clears the International Society of Sports Nutrition's per-meal protein range of roughly 0.25 to 0.40 g/kg, which lands between 20 and 40 g for most adults, comfortably under 400 kcal.3
The trap on a fat-loss day is trusting a salad's name. Avocado & Quinoa Superfood Ensalada, ordered exactly as published with dressing and no protein add, is 690 kcal, 19 g protein, 51 g fat, and only 2.75 g protein per 100 kcal, the highest-fat, lowest-protein-density named salad on the menu despite the "Superfood" branding.1 Baja Green Goddess Salad is worse still at 2.5 g per 100 kcal. Both exist because the base recipe does not include a default protein at the portion a diner assumes is included. Removing dressing and adding the published chicken, chicken adobado, or plant-based row is what turns either salad into a real fat-loss order rather than a vegetable-and-dressing bowl.
05Balanced training-day meal
Chen's Crispy Rice Salad with chicken, ordered exactly as published with dressing, is the strongest all-around item on the menu without any customization: 700 kcal, 35 g protein, 64 g carbohydrate, 37 g fat, 10 g fiber, and 1,580 mg sodium.1 It is the rare named item that delivers real carbohydrate, real fiber, and a protein dose that clears a per-meal floor with no add-on math required, which makes it the right default before or after a training session when total food volume matters as much as macros.
The sodium is real at 1,580 mg, roughly 69% of the FDA's 2,300 mg daily value.2 Pair this order with a lower-sodium breakfast or dinner rather than stacking it against another sodium-heavy restaurant meal the same day.
06Lower sodium
Two orders lead on sodium for different reasons. The single-chicken Modern Caesar build wins by coincidence of the same math that makes it strong on fat loss: 890 mg, 38.7% of the FDA sodium DV, 33 g protein.12 For a sandwich-format pick, Turkey Avo Salsa Verde as a half sandwich is the lowest-sodium option among all published half-sandwich rows: 420 kcal, 21 g protein, 740 mg sodium, in a compact 8 oz format built on moist avocado and salsa verde rather than a heavy sauce.1
Sodium is not evenly distributed across the menu. Several items clear 1,500 mg in a single order: Peruvian Steak Sandwich at 2,340 mg, Chimichurri Steak and Bacon at 2,270 mg, Golden State Cobb Wrap at 2,100 mg, and Greek Lemon Chicken and Farro Soup bowl at 2,070 mg.1 None of those numbers reflect fat gain the next morning. Sodium load drives water retention, and a single elevated weigh-in after a high-sodium meal is scale noise, not a change in body composition. Read the trend across 7 to 14 days rather than reacting to one morning after one order.
07Plant-forward
Chen's Crispy Rice Salad with tofu, ordered without dressing, is the strongest plant-forward whole item on the menu: 600 kcal, 28 g protein, 1,130 mg sodium, 4.67 g protein per 100 kcal.1 It is also the only whole plant-based salad with a fully official, single-source total.
A second tofu scoop is the natural next question, and this is exactly the kind of cross-item borrowing the menu structure does not fully support. Baked Marinated Tofu is published as a 210 kcal / 15 g protein add-on, but that row appears under the Chen's Crispy Rice Wrap, not under the salad. Applying it to the salad base would put the total near 810 kcal, 43 g protein, and roughly 1,900 mg sodium, but that number depends on the tofu add-on being portable from the wrap's ordering flow to the salad's, which the PDF does not state directly. Present any second-scoop plant-forward total as a constrained estimate, and confirm at the counter whether a wrap-listed add-on can be applied to the corresponding salad before treating it as settled.1
08GLP-1 and low-appetite ordering
Mendocino Farms does not publish a small-format, low-volume, protein-forward item the way some competitors do, so this is a constrained recommendation rather than a purpose-built answer. The goal on a low-appetite day is protein density per bite and per minute of eating, not total calories, since finishing the meal is the actual constraint.
Turkey Avo Salsa Verde as a half sandwich is the best fit available: 420 kcal, 21 g protein, 740 mg sodium, a compact 8 oz format with moist avocado and salsa verde that does not demand the chewing time or plate volume of a full salad.1 It clears roughly 20 g of protein in a portion most people can realistically finish. For someone who can tolerate more volume, the dressing-light Modern Caesar with one chicken scoop is the higher-protein alternative at 370 kcal and 33 g protein, at the cost of more physical bulk to work through.

09The Farmhouse Ranch conflict
One item in Mendocino Farms' own February 2026 PDF does not behave like every other row on the page. The Farmhouse Ranch Salad's "without dressing" row lists more weight and more calories than its "with dressing" row: 15.2 oz and 350 kcal with dressing, versus 16.0 oz and 460 kcal without dressing.1 That is backwards. Every other named salad, including its seasonal neighbor Seasonal GOAT with Sweet Citrus, drops both weight and calories when dressing is removed, exactly as expected — the Seasonal GOAT goes from 790 kcal with dressing to 580 kcal without.1
This is a documented inconsistency inside Mendocino Farms' own published guide, not a typo Fuel is correcting on the chain's behalf. Do not treat either Farmhouse Ranch number as settled. If you order the Farmhouse Ranch Salad and want to log it precisely, log what is printed on your receipt or in the app at the time of order, and treat the PDF's own numbers for this specific item as unresolved until Mendocino Farms corrects the guide.
10Dressing, bread, and side traps
Fifteen dressings and sauces span more than a thirteen-fold calorie range, from 25 kcal (Jalapeño Salsa Verde) to 340 kcal (Classic Caesar Dressing) per listed 2 fl oz serving.1 Chipotle Vinaigrette (280 kcal, 29 g fat), Rustic Red Wine Vinaigrette (300 kcal, 32 g fat), Farmhouse Vinaigrette (280 kcal, 28 g fat), and Vegan Ranch (250 kcal, 26 g fat) form a cluster of heavy, essentially zero-protein dressings. Swapping any of them for Jalapeño Salsa Verde or Pomodoro Sauce (60 kcal, 3.5 g fat) saves 220 to 275 kcal for no protein loss, since none of the heavy dressings carry meaningful protein either.1
Bread works the same way. Sourdough (300 kcal, 2 g fat, 10 g protein) and Ciabatta (260 kcal, 3.5 g fat, 7 g protein, the lowest-sodium bread at 160 mg) are the two defensible choices on a protein-focused order. Gluten Free Bread (420 kcal, 18 g fat, 6 g protein, 920 mg sodium) and the Mejorado Vegan Tortilla (460 kcal, 18 g fat, 9 g protein, 710 mg sodium) are the two heaviest, and the tortilla is the structural reason every wrap on the menu underperforms its salad counterpart on protein density.1
Sides carry their own trap. Southern Potato Salad and Kale and Apple Salad are fat-dominant at every tier size, 17 to 21 g of fat for 1 to 2 g of protein even at the smallest portion. Basil Pesto Shells small (270 kcal, 8 g protein) is the only side worth ordering on a protein-focused build, and only at that tier. The large tier balloons to 1,070 kcal, 33 g protein, and 2,600 mg sodium, a full-meal-sized side rather than an add-on.1
11Sodium ceilings on the steak and wrap lines
Two sandwiches and one wrap deserve a standing caution independent of any other goal. Peruvian Steak Sandwich runs 2,340 mg sodium in one order, and Chimichurri Steak and Bacon runs 2,270 mg, both at or near a full day's FDA sodium Daily Value in a single item.12 No lower-sodium steak sandwich exists on the current published menu. If steak is the goal, pair either sandwich with a genuinely low-sodium breakfast and dinner, or choose a chicken-based sandwich instead.
Golden State Cobb Wrap compounds the wrap penalty with a sodium problem: 1,170 kcal, 2,100 mg sodium, and only 35 g protein, the worst combined load on the wrap line for a mid-tier protein total.1 The tortilla adds bulk without adding protein on every wrap on the menu, so ordering the same filling as a salad and skipping the tortilla is the fix in every case, not just this one.
12How to log a Mendocino Farms order in Fuel
Log a named item exactly as published when you order it unmodified. The published sandwich or "with dressing" salad row is a clean, reusable Fuel entry. For a modified order, log the components separately the first few times, then save the assembled total as a custom entry once you have ordered it the same way twice.
Sauces and dressings are each a discrete, independently weighed row rather than a fixed inclusion, so if you ask for dressing on the side and use less than the full pour, log the actual amount used rather than defaulting to the "with dressing" salad total.1 The gap between using none and using the full serving can run 250 to 340 kcal depending on the dressing.
Half-sandwich logging needs one extra check. Six sandwiches have an official retail half-sandwich row. Three others — Prosciutto & Chicken, Chimichurri Steak and Bacon, and a possible "Mario's Caprese" naming overlap with Vegetarian Pesto Caprese — only have a half-portion value in the document's catering section. If you order a half of one of those three, treat the logged value as a catering-sourced estimate and re-check it against what actually arrives.1
Bread swaps should be logged with the specific bread row rather than a flat adjustment, since the spread between the lightest and heaviest bread option is 220 kcal.1 The same specificity matters for any double-protein build: log the Modern Caesar base and each chicken add-on as separate lines the first time you order it, and only fold them into one saved custom meal once you have confirmed the second scoop is actually available at your location. If a second scoop turns out not to be orderable, log the single-add-on version instead and treat the double-chicken total as a reference number, not a saved meal.
